WING INGREDIENTS:

~ 3 lbs Chicken Wings (Whole foods organic doesn’t require removing the tips)  

1/4 Cup Baking Powder (NOT BAKING SODA) 

1 - 1 ½  Teaspoon Kosher Salt - Fine

1 ½  Teaspoon Smoked Paprika

Recipe for sauce is the poured off 2 cups from the “Pulled Pork Texas Asian Fusion” recipe

KITCHEN ESSENTIALS FOR THIS RECIPE:

Baking sheet with a rack

Pam (or equivalent cooking spray)

Aluminium Foil

Mixing Bowl

Strainer 

PRE-COOKING PREP DIRECTIONS: 

  1. Empty your oven of any pots :)

  2. Arrange the  oven racks in your oven so that one is in the closest quarter to the top of the oven and the other is in the lowest level

  3. Preheat oven on to 250°  

  4. In a ziplock bag add the baking powder, salt, paprika and onion powder - close and shake vigorously - place to the side

  5. Line your baking sheet with foil and place the rack on top of the sheet - spray this rack with Pam or equivalent 

  6. With strainer in the sink, place the chicken wings and rinse gently with cold water
    Do this carefully so the water does not splatter onto the counter (although I disinfect the sink and all surrounding areas when making anything with poultry) no need to have the water on high setting, take your time and rinse it well slowly

  7. Pat the chicken wings dry with paper towel and place into mixing bowl

  8. Sprinkle on the seasoning mix and coat evenly on all wings - yes, this is where you get your hands dirty and mix them well to ensure everything is evenly covered

  9. Once the wings are all coated, place them onto the Pam sprayed rack with skin side UP - they can be close together as they will shrink slightly

NOW FOR THE FUN PART - COOKING!

  1. With oven@ 250°  Place the rack of wings on the bottom rack and cook for 30 minutes

  2. Place racks of wings onto the top racks and increase the temperature to 425° & bake additional 25 minutes

  3. After 25 minutes, remove wings, toss with sauce, rotate the rack and bake for another 25  minutes - until the wings are golden brown in color
