INGREDIENTS:

3-4 Lb pork Shoulder or Butt

1 Cup BBQ sauce (I use Sweet Baby Ray’s Gourmet Sauces - Hickory & Brown Sugar)

½ Cup White wine vinegar (or apple cider vinegar)

½ Cup Chicken Broth

1 Tablespoon Garlic Sauce (Coconut Aminos: Soy-free asian style seasoning sauce)

1 Tablespoon Lea & Perrins Worcestershire sauce

1 Tablespoon Ponzu Sauce

¼ Cup Light brown sugar

2 Tablespoons low sodium soy sauce

2 Tablespoons Unsalted butter

5 Cloves of fresh garlic (crushed/minced)

1 Large Onion (finely chopped)

1 Teaspoon smoked paprika

KITCHEN ESSENTIALS FOR THIS RECIPE:

Mixing Bowl (medium/large size)

Crock Pot (A smaller size option is 3.5 Qt Crock Pot)

PRE-COOKING PREP DIRECTIONS:

  1. Set the pork on the counter so it has some time to get to room temp

  2. Turn crock pot on High setting

    • Add 1 Teaspoon vegetable oil,  ½ Teaspoon Truffle oil and the butter to bottom of crock pot

    • After few minutes, add 2 Tablespoons of the minced garlic and stir with  butter/oil for about 5 minutes and then add the chopped onions

  3.  In mixing bowl combine all the remaining ingredients:

    • BBQ sauce, White wine vinegar (or apple cider vinegar), Chicken Broth, Garlic Sauce, Worcestershire sauce, Ponzu Sauce, Light brown sugar, soy sauce, smoked paprika & remainder of fresh garlic

NOW FOR THE FUN PART - COOKING!

  1. The onions and garlic will be slowly cooking in the crock pot

  2. Place your pork directly on top of the bed of garlic/onions

  3. Whisk together your ingredients in the mixing bowl one last time and slowly pour over the meat

  4. Cover the meat, keep the temp at High, set timer for 5 hours and enjoy the yummy smell that will soon fill the house!

  5. I set an alarm for 2 ½  hours to  check on the meat - I like to flip it over so that both sides are immersed equally in the sauce

  6. After 5 hours, check the meat for how easily it pulls apart - if it is close to easy, turn temp to Low and let it cook for another hour

  7. Remove the meat to a cutting board, ‘tear apart’ with 2 forks

  8. Before putting the pulled pork pork back into the pot, I removed about 2 cups worth of the ‘sauce’ and set aside (Will use this to make sweet/sour wings)

  9. Place the pulled pork back into the crock pot and turn back on high for about 45 min

I serve with either a hamburger style bun or baguette...Enjoy!
