Fluffy Pancakes

I am splitting this into ‘dry’ ingredients and ‘wet’ ingredients - I think this makes it much easier and so much less intimidating for someone who, like me, is not great at making breakfast/brunch foods!!!

DRY INGREDIENTS:  Combine these in a large mixing bowl

2 Cups all purpose unbleached flour

¼ Cup Granulated Sugar

4 Teaspoons baking powder (NOT BAKING SODA)

¼ Teaspoon baking soda

½ Teaspoon kosher salt - fine

¼ Cup unsalted butter

⅛ Teaspoon ground nutmeg

¼ Teaspoon ground cinnamon

Pam or equivalent

Paper Towel

WET INGREDIENTS:

1 ¾ Cup Skim Milk (or Light Coconut Milk)

2 Teaspoon Pure Vanilla extract (get the best quality you can - it makes a HUGE difference)

1 Large organic brown egg

1 Tablespoon fat free Greek yogurt

**If you think the batter is a bit thick, add 2 Tablespoons skim milk - I always end up adding it

OPTIONAL ADDITIONS:

¾  Cup Blueberries

¾  Cup Chocolate Chips

½ Banana

Nutella

Peanut Butter

Confectioner Sugar/Powdered Sugar

KITCHEN ESSENTIALS FOR THIS RECIPE:

Mixing Bowl (medium/large size)

Measuring Cups

Whisk

¼ Cup measuring cup

Pam or equivalent 

Fruits (listed above)

8 - 10” non stick skillet (you may notice I used the one I had for a decade….& now I replaced it so I hope the next set of recipes will be more aesthetically pleasing :) 

PRE-COOKING PREP DIRECTIONS: 

  1. Combine all the dry ingredients together with a whisk

  2. Mix the wet ingredients together well with a whisk until they appear smooth and pour into the ‘dry’ ingredients bowl

NOW FOR THE FUN PART - COOKING!

  1. Heat the non-stick pan, remove from heat and spray with Pam or equivalent

  2. I spoon the batter mix onto the skillet with the measuring cup to keep similar size/cook times

    • If you are making them blueberry, chocolate chip, etc once you pour batter for all of them onto the skillet,  add ¼ cup (or less)  to the pancake

  3. Slowly & gently ‘shake’ the skillet after about 30 second - then take your spatula and place it below the pancake, gently checking if it firm enough to flip - I prefer to err on the side of caution and wait another 30 sec until I flip it

  4. Once flipped, add the remainder of the blueberries,  chocolate chips, etc until fully cooked - For me, this means they appear fluffy and I usually just slip the spatula under the pancake gently and see of they move easily with no visible ‘liquid batter’ - that’s my cue that this batch is done 

  5. I remove the pan off the stove and wipe the pan with a paper towel and lightly spray with pam before returning to heat and adding the next batch onto the pan - and repeat the cooking

  6. So once you have your stack of pancakes…..I prefer sprinkling some powdered sugar over maple syrup on them.
