Garlic Butter Shrimp Scampi

INGREDIENTS:

  • 1 - 1.2 pounds deveined large shrimp

  • 2 Tablespoons extra virgin olive oil

  • 2 Tablespoons garlic butter (or 2 tablespoons salted butter & 4 garlic cloves) 

  • 2 Tablespoons dry white wine 

  • 2 Tablespoons dried parsley

  • 2 Tablespoons lemon juice

  • 1 Teaspoon parmesan cheese

  • 1 Teaspoon all purpose unbleached flour

  • 2 Tablespoons pasta water

KITCHEN ESSENTIALS FOR THIS RECIPE:

Medium size pot (for pasta)

Skillet or wok (for shrimp)

Strainer


PRE-COOKING PREP DIRECTIONS: 

  1. Place shrimp in strainer & rInse under cold water, allowing to dry while you start preparing the remainder of the recipe

  2. Measure out ingredients

  3. Have a clean strainer ready by the sink for the pasta to drain

NOW FOR THE FUN PART - COOKING!

  1. Start cooking pasta according to instructions on pack 

  2. Heat olive oil and garlic butter in the skillet/wok on high until bubbling (about 1 minute)

  3. Add the shrimp, season with salt and pepper to taste and sauté for 1-2 minutes on each side (they will become pink/white when done) - do not overcook as they will become hard  

  4. Pour in wine and lemon juice, bring to a simmer for 1-2 minutes (reduces the wine) 

  5. Lower heat to low, add parsley and continue to stir, add pasta water 

  6. Add flour and parmesan cheese and stir until no lumps appear

  7. Once pasta is done, drain and add to skillet/wok

  8. Stir to coat evenly

    Serve & Enjoy!
