Buffalo Wings with Hot Sauce

INGREDIENTS:
~ 3 lbs Chicken Wings (Whole foods organic doesn’t require removing the tips)
1/4 Cup Baking Powder (NOT BAKING SODA)
1 - 1 ½ Teaspoon Kosher Salt - Fine
1 ½ Teaspoon Smoked Paprika
½ Teaspoon Onion Powder
KITCHEN ESSENTIALS:
Pam (or equivalent cooking spray)
Aluminium Foil
Mixing Bowl
PRE-COOKING PREP DIRECTIONS:
Empty your oven of any pots :)
Arrange the oven racks in your oven so that one is in the closest quarter to the top of the oven and the other is in the lowest level
Preheat oven on to 250°
In a ziplock bag add the baking powder, salt, paprika and onion powder - close and shake vigorously - place to the side
Line your baking sheet with foil and place the rack on top of the sheet - spray this rack with Pam or equivalent
With strainer in the sink, place the chicken wings and rinse gently with cold water. Do this carefully so the water does not splatter onto the counter (although I disinfect the sink and all surrounding areas when making anything with poultry) no need to have the water on high setting, take your time and rinse it well slowly
Pat the chicken wings dry with paper towel and place into mixing bowl
Sprinkle on the seasoning mix and coat evenly on all wings - yes, this is where you get your hands dirty and mix them well to ensure everything is evenly covered
Once the wings are all coated, place them onto the Pam sprayed rack with skin side UP - they can be close together as they will shrink slightly
NOW FOR THE FUN PART: COOKING!
With oven@ 250° Place the rack of wings on the bottom rack and cook for 30 minutes
After the first 30 minutes, increase the temperature to 425° & bake additional 30 minutes
After 30 minutes, rotate the rack and bake for another 25-30 minutes - until the wings are golden brown in color
Toss with hot sauce & Enjoy!
HOT SAUCE INGREDIENTS:
In Small sauce pan, combine & heat on low for 5 minutes to warm:
1 Cup Steve & Ed’s Buffalo Wing Sauce, ½ Cup Frank’s Red Hot Wings Sauce & 4 Tablespoons Honey
