Buffalo Cauliflower Dip

INGREDIENTS:

1 Head of cauliflower

Pam or equivalent

8oz Philadelphia cream cheese (⅓ fat)

½ Cup Steve & Ed’s Buffalo Sauce

¼ Cup Triple cheddar - Creamy Melt (Kraft) 

¼ Cup Mozzarella -  Creamy Melt (Kraft)

Smoked Paprika

¼ Cup heavy cream

2 Cloves of garlic

KITCHEN ESSENTIALS FOR THIS RECIPE:

Mixing Bowl (medium/large size)

Roasting rack 

Blender

Ramekins or baking dish

PRE-COOKING PREP DIRECTIONS: 

  1. Preheat oven to 400°

  2. Line pan with foil, spray rack with Pam (or equivalent)

  3. Cut cauliflower into smaller parts & place onto rack

  4. Sprinkle with smoked paprika

  5. When placing cauliflower into over, take cheeses out to get them to room temp

NOW FOR THE FUN PART - COOKING!

  1. Place rack with cauliflower into oven and bake at 400° for 40 min 

  2. Remove from oven and transfer to blender

  3. Add heavy cream and garlic to blender - after 2 minutes, add the ½ cup of buffalo sauce into the blender and continue until you get the desired consistency - it won’t be as smooth as hummus 

  4. Place contents into mixing bowl and add the cheeses - blend gently

  5. Transfer to your baking dish and bake at  400° for 30 min - check the oven after about 15 minutes

    The dip will be golden brown around the edges and slightly bubbling
