Buffalo Cauliflower Dip

INGREDIENTS:
1 Head of cauliflower
Pam or equivalent
8oz Philadelphia cream cheese (⅓ fat)
½ Cup Steve & Ed’s Buffalo Sauce
¼ Cup Triple cheddar - Creamy Melt (Kraft)
¼ Cup Mozzarella - Creamy Melt (Kraft)
¼ Cup heavy cream
2 Cloves of garlic
KITCHEN ESSENTIALS FOR THIS RECIPE:
Mixing Bowl (medium/large size)
Blender
Ramekins or baking dish
PRE-COOKING PREP DIRECTIONS:
Preheat oven to 400°
Line pan with foil, spray rack with Pam (or equivalent)
Cut cauliflower into smaller parts & place onto rack
Sprinkle with smoked paprika
When placing cauliflower into over, take cheeses out to get them to room temp
NOW FOR THE FUN PART - COOKING!
Place rack with cauliflower into oven and bake at 400° for 40 min
Remove from oven and transfer to blender
Add heavy cream and garlic to blender - after 2 minutes, add the ½ cup of buffalo sauce into the blender and continue until you get the desired consistency - it won’t be as smooth as hummus
Place contents into mixing bowl and add the cheeses - blend gently
Transfer to your baking dish and bake at 400° for 30 min - check the oven after about 15 minutes
The dip will be golden brown around the edges and slightly bubbling
